A super creamy comforting soup
Melt the butter and olive oil in a pan, add the celeriac, potato and onion. Cover and gently cook for 10 mins, until they begin to soften.
Add the stock and thyme, cover and simmer for 20-30mins until the vegetables are tender.
Remove from heat and let cool slightly before blended to a super smooth consistency.
Rewarm gently and add the cream, season to taste and serve.
